杏仁砂糖面包
做面包真心挺伤不起,每次回家开始做都要折腾到九点十点的,一边瞌睡一边等……
不过为了小人的早餐,还是拼了……

  • 低筋粉30g
  • 酵母2g
  • 白砂糖21g
  • 65ml
  • 鸡蛋22g
  • 1g
  • 杏仁片28g

Steps to make 杏仁砂糖面包

  • 1.称量好高筋粉和低筋粉,将两者混合。
  • 2.将除了杏仁和黄油外的材料一起倒入面粉中,用手揉成光滑的面团。大概揉了10分钟。
  • 3.然后将室温软化的黄油加入面团中。继续揉,时不时摔打几下。
  • 4.待揉至扩展阶段,出手套模即可。
  • 5.将面团放入容器中进行发酵。
  • 6.发酵至2.5倍大左右,用手指蘸干粉戳个洞,不回弹就发酵好了。
  • 7.将面团取出,用擀面杖排气。
  • 8.然后将面团分成几个大约50g左右的小面团。
  • 9.将小面团整形好后,放入烤箱中,40度,二次发酵40分钟。
  • 10.然后取出,刷上蛋液。
  • 11.再用剪刀在顶部剪个十字口。
  • 12.撒上杏仁片。
  • 13.最后撒上白砂糖,烤箱预热175度,中层上下火,17分钟左右。
