紫薯扭扭面包
这次不纠结了,先选择了图案再准备材料,用紫薯造色,选择发酵面粉。

Steps to make 紫薯扭扭面包

  • 1.二个紫薯冼净去皮切片,入锅蒸熟;
  • 2.取180克加适量水入料理机打成泥;
  • 3.准备其他食材;
  • 4.面包机和面:先倒入牛奶,盐、糖对角放,倒入蛋液、橄榄油、高筋面粉,高粉中间挖个小坑倒入酵母,选择2个揉面程序;
  • 5.面团取出入不锈钢盆,盖保鲜膜或湿布室温发酵1个多小时,现在室温32度,一个小时一发就好了;紫薯泥入锅炒干,喜欢甜口的加10克糖、留180克紫薯泥备用;
  • 6.面团总重量近500克,揉压排气后平均分成二等份滚圆,盖湿布中间醒发15分钟;
  • 7.面团压扁擀成二个九寸的圆薄片;
  • 8.案板上撒点儿面粉防粘,取一个面饼抹上紫薯泥,中间高四周低,外圈不要抹利于整形;
  • 9.盖上另一片,中间扣一小碗,平均切成四等份,每份再切四刀,共16块。需要说明:面团下面需要垫一张硅油纸,整形后连同纸一起移到烤盘上;
  • 10.移至烤盘上,每个花瓣向右拧二圈;
  • 11.中间花芯用黑芝麻点辍,发现家里没有黑芝麻了,选择了烤熟的黑米;
  • 12.小碗取下来刷层蛋液,用硬一点的纸做个圆筒,罩住中间的花芯,撒匀黑米;
  • 13.完整的图案,还没烤就已经很美了!
  • 14.预热烤箱160度,不用二发了,室内温度32度,边整形边发酵,入烤箱上下火中下层烤35分钟,中间上色满意及时加盖锡纸。
