Steps to make 老北京宫廷酸梅汤

  • 1.除桂花和冰糖以外的所有材料,用流水冲洗干净;
  • 2.加水3升,浸泡12小时(过夜)
  • 3.上火,大火煮开转中小火保持微微沸腾,炖煮1.5——2小时;
  • 4.加入适量冰糖煮化,尝一尝,调出适当的口味儿;
  • 5.过滤出汤汁;
  • 6.余下的料渣重新入锅,加水2升;
  • 7.大火煮开,中小火慢煮40分钟—1小时;
  • 8.再次加入适量冰糖,调出适当的口味儿;
  • 9.加入桂花,关火搅匀,静置片刻;
  • 10.过滤出汤汁,弃去料渣不用;
  • 11.混合两次熬煮的汤汁;
  • 12.晾凉即可饮用,冰镇后口味更佳;
  • 13.饮用时还可以再加入冰糖和干桂花。
