  • 低粉75g
  • 细砂糖55g
  • 热水40g
  • 可可粉15g
  • 柠檬汁2滴
  • 奶油奶酪100g
  • 淡奶油250g
  • 细砂糖20g

Steps to make 巧克力乳酪蛋糕

  • 1.可可粉加入热水。
  • 2.搅拌至细腻顺滑。
  • 3.鸡蛋分离,蛋清中加入2滴柠檬汁。
  • 4.搅打至粗泡状,一次性加入糖。
  • 5.打发至湿性大弯钩状态。
  • 6.蛋黄中+牛奶+色拉油+巧克力液。
  • 7.低速搅打至粗泡状。
  • 8.倒入低粉。
  • 9.搅拌均匀。
  • 10.加入三分之一蛋白霜,用刮刀翻拌均匀。
  • 11.倒入蛋白霜盆,继续翻拌均匀。
  • 12.倒入铺了油纸的方形烤盘,抹平,轻震去除气泡。
  • 13.送入预热好的烤箱,中层,上下火150度烤18-20分钟。
  • 14.拿出放晾网上晾凉,均分4片。
  • 15.奶油奶酪隔热水搅拌至顺滑。
  • 16.淡奶油加糖打发至花纹清晰。
  • 17.加入顺滑是奶油奶酪。
  • 18.再低速搅打几圈。
  • 19.接下来装饰:一层蛋糕片、一层奶油、一层蛋糕片、一层奶油……
