凉拌剔骨肉
用剔骨肉来做菜,这又是一个农家的吃法,也是久违的一个味道了。今天就用剔骨肉来调个凉菜吃,用以怀念那些记忆里的鲜美滋味。

以前家里隔段时间就会买点猪大骨,买来后用点佐料添上一锅水炖了吃肉喝汤。说是吃肉,其实就是骨头上的那零星的筋肉,不过那些靠近骨头肉却是那么的鲜美。有时候就心思为什么都爱啃排骨了,是靠近骨头的肉的味道是最鲜美的。

剔骨肉家里会用来炖菜或调些凉菜吃,剔过肉的骨头又被扔到锅里继续熬汤。一锅熬好的骨头汤用处是很大的:炖菜、浇面条,或者在碗里撒上点葱花、香菜末把滚热的骨头汤浇在碗里,热热的喝来,那也是很鲜美的。

    Steps to make 凉拌剔骨肉

    • 1.猪大骨煮熟后,把肉用刀子剔下。
    • 2.黄瓜打皮后用刀拍扁。
    • 3.把黄瓜切成大段。
    • 4.大蒜加精盐砸成蒜泥后,调入一汤匙味极鲜酱油。
    • 5.加入两汤匙凉拌醋。
    • 6.倒入适量花椒油,去腥。
    • 7.拌匀后,调入盛有黄瓜、剔骨肉的小盆里拌匀即可。
