Steps to make 麻辣牛肉干

  • 1.买回的牛肉泡水。
  • 2.切成小手指粗的小条,切片或小丁也行。
  • 3.牛肉冷水入锅,锅开后捞去浮沫。用热水冲洗干净。
  • 4.生姜三片,大葱两段,大蒜三粒。花椒一小勺,大料一个,白芷一小片,良姜一片,草寇、白扣各一,香叶两片,茴香适量量。
  • 5.煮锅中加入多半锅水,放入香料、配料煮至水热,放入牛肉条。
  • 6.大约煮半小时后加入少许的盐,入个底味。继续煮15-20分钟。
  • 7.捞出控水,牛肉条只有342g重。
  • 8.炒锅要多加些菜籽油。
  • 9.牛肉条五成热入油锅炸。
  • 10.别炸的太干。太干后期不好入味。
  • 11.炒锅留底油,要比图片多2倍的底油(我后期又添加了)。
  • 12.下葱姜。
  • 13.加入牛肉条。
  • 14.按个人口味加入辣辣粉,熟白芝麻小火翻炒。
  • 15.加入干炒花椒粗粉。做法:取适量花椒在炒锅中炒香,用碗碾压成粗粗的花椒粉。
  • 16.加入一碗牛肉汤。
  • 17.小火炖煮至水干。中间尝尝汤味加入适量盐、糖调味。
  • 18.出锅前的牛肉干。
  • 19.一吃就上瘾的川式牛肉干。
