Steps to make 酸菜鱼

  • 1.1、锅中放油烧六成热,放花椒、姜片、蒜片炒出香味,再倒入泡酸菜丝炒约半分钟。
  • 2.2、加汤或水,烧沸后下鱼头、鱼骨、料酒熬煮约十分钟。
  • 3.3、倒入汤锅中烧沸,将鱼片抖散逐一放入锅中
  • 4.4、同时将炒锅洗净置火上,放油烧至六成热,放入泡辣椒碎小火炒出香味(喜欢吃辣的人可以在此时放入两大匙油辣椒一同炒)。
  • 5.5、把炒锅中的泡辣椒碎泼入煮酸菜鱼的锅中。
  • 6.6、继续煮约一分钟,放鸡精搅匀后起锅。
  • 7.7、起锅后撒上葱花即成!
