春季养生菜“桃仁炒虾球”
“核桃仁”可健脑、益智、乌发,是很好的滋补品。“虾”是含优质蛋白较高的海产品类,其味道十分鲜美,是宴席中的上品,“虾”还有良好的药用价值,可助阳补肾、降噪开胃、补虚健脾,虾虽属微寒性食物,但最适合春季食用,“虾干”的药用价值更高,用它做菜可不受季节的限制,“虾干”煲汤可使阴阳两亏者得到良好的改善。
春季用虾和桃仁入菜,当列为不错的首选,今天就用“桃仁”和“青虾”做道春季养生菜,叫做“桃仁炒虾球”,具体制作如下;

  • 生核桃仁50克
  • 胡萝卜片35克
  • 青椒片30克
  • 葱丁25克
  • 姜片10克
  • 黄酒15克
  • 2克
  • 鸡粉2克
  • 白胡椒粉少许

Steps to make 春季养生菜“桃仁炒虾球”

  • 1.青虾肉、生核桃仁、胡萝卜片、青椒片、葱丁、姜片、黄酒、盐、鸡粉、白胡椒粉、淀粉、烹调油。
  • 2.把生核桃仁放入烤箱,用180度的炉温烘烤6-7分钟取出晾凉备用。
  • 3.往青虾肉里放入放入盐、白胡椒粉、鸡粉和黄酒抓匀。
  • 4.放入适量的干淀粉抓匀,把虾浆制10分钟备用。
  • 5.勾兑碗芡,在碗里放入盐、白胡椒粉、鸡粉。
  • 6.黄酒和适量水淀粉搅匀,再放入适量的清水搅匀
  • 7.最后往碗芡里放入三分之二的葱丁和姜片备用。
  • 8.把汤锅的水烧开,下入浆制好的虾肉进行汆烫,虾肉烫至变色后捞出备用。
  • 9.另起锅烧热,注入少许烹调油,油热下入葱姜煸炒,葱姜煸香后下入胡萝卜片煸炒。
  • 10.把胡萝卜炒透后放入青椒片炒匀,然后放入汆烫好的虾球用大火翻炒均匀。
  • 11.炒匀后烹入碗芡。
  • 12.待碗芡糊化后放入核桃仁炒匀。
  • 13.然后便可出锅码盘上桌食用。
