  • 青汁粉1g
  • 红曲粉1g
  • 紫薯粉2g
  • 熟糯米粉少许

Steps to make 天然彩色冰皮月饼

  • 1.170g冰皮月饼预拌粉用170g开水冲开,搅拌均匀成面团后晾凉。
  • 2.称量好青汁粉1g、红曲粉1g、紫薯粉2g。
  • 3.枣泥馅准备25克一个,共14个。
  • 4.带上手套,将月饼面团平均分成4份,取其中1份面团加青汁粉,揉匀成小球。
  • 5.1份纯色面团不动,另2份面团各加红曲粉和紫薯粉揉匀(我想吃得放心点,将面团隔水蒸2分钟)。
  • 6.将各色面团平均分成14个,每一个小球6.2克左右。
  • 7.4个面团用手挤在一团(凑成25克左右)。
  • 8.将饼皮压扁。
  • 9.用擀面杖将饼皮擀成中间厚、周围薄,将25克枣泥馅放饼皮中间(桌面撒少粉熟糯米粉)。
  • 10.左手按馅的上端,右手虎口转边,将饼皮向上收口,揉圆。
  • 11.选好一花片,装入Chefmade学厨50克月饼模桶身(水晶粉)(WK9315)里,调制安装好。
  • 12.面团的收口那面朝下、光滑的那面朝上,放入学厨50克月饼模里。
  • 13.垂直放在金盘里,轻轻按2下后脱模。脱模零压力,纹路很清晰、花型立体感强,超级好用!用它制作的:天然彩色冰皮月饼,真是赏心悦目!
