蛋黄白莲蓉月饼
往年的中秋节家里总是堆了不少的月饼,可是能够让我们吃得过瘾的蛋黄月饼却总是少之又少。所以每年的月饼我们总是吃不过瘾,因此在烤箱到家的第二天,我就开始搜索月饼材料,我今年要自己做蛋黄月饼,做多多的,而且要皮薄馅多,然后蛋黄都是一整个的,好让我的家人今年把蛋黄月饼一次吃个够呵。

  • 低粉160克
  • 咸蛋黄15个
  • 莲子300克
  • 转化糖浆110克
  • 白沙糖150克
  • 花生油100克,用于馅料
  • 枧水4克
  • 鸡蛋1个
  • 花生油1碗

Steps to make 蛋黄白莲蓉月饼

  • 1.莲子提前泡软,去莲子心 。
  • 2.压力锅兑水和莲子齐平,15分钟后排气捞出沥干
  • 3.莲子打成泥,放入锅里,中小火炒一会后,加入白糖继续炒均匀
  • 4.分三次加入花生油,每一次都炒到完全吸收。三次加完后继续炒到莲蓉不沾锅即可。
  • 5.咸蛋黄用花生油浸泡半小时后捞出来沥干油。
  • 6.转化糖浆 枧水 花生油混合后,筛入低粉,混合揉团,盖上保鲜膜醒一小时。
  • 7.饼皮面团分15份,团球,莲蓉馅分15份,团球。备用。
  • 8.取一块莲蓉包上蛋黄团球备用。15个依次都包好蛋黄。
  • 9.取一块饼皮球,擀开,包上莲蓉蛋黄馅。包好滚圆,沾点低筋粉。
  • 10.用模具压成月饼坯。
  • 11.烤盘上放油纸,月饼坯盖在油纸上。
  • 12.烤箱预热200度,10分钟。中层烤5分钟后,拿出来刷一层全蛋液
  • 13.再继续烤15分钟即可。
