番茄水煮鱼
水煮鱼里加入酸酸甜甜的番茄,可以降低辣度,适合不太能吃辣的小伙伴。调味主要依靠超市买来的成品水煮鱼调料包,操作比较简单。现成的调料包虽然比较方便,但用过的人都知道完全按照包装上给出的步骤操作,基本上……不怎么好吃。所以,化腐朽为神奇的方法来了。

  • 杏鲍菇1个
  • 豆腐皮半张
  • 水煮鱼调料包半份
  • 娃娃菜一棵
  • 葱花少许
  • 3瓣
  • 白糖一小勺
  • 桂皮两小块
  • 大料一瓣
  • 草果1个

Steps to make 番茄水煮鱼

  • 1.刀工比一般般还一般般的小伙伴,比如说像某樨,直接买一块龙利鱼鱼回来切,既没有刺又好操作。刀工了得的小伙伴可以自己买条河鱼回来片鱼片。鱼片切好后,用水煮鱼调料包里的腌肉料拌一下哦。(不买水煮鱼调料包的同学,可以用胡椒粉、料酒、盐、少许淀粉完成这一步也完全没问题。)
  • 2.豆腐皮(也就是东北那边的干豆腐)切丝,杏鲍菇切片。
  • 3.娃娃菜切条。
  • 4.番茄切小块。
  • 5.豆腐皮、杏鲍菇、娃娃菜焯熟放到装盘的容器底部。
  • 6.葱姜蒜切碎。
  • 7.凉锅凉油小火炸香桂皮、大料、草果。
  • 8.放入姜蒜炝锅。
  • 9.加入水煮鱼调料包里的酱包,某樨加了一半,大家根据自己吃辣的程度自行调整。(没有买调料包同学,可以用两大勺老干妈,一大勺郫县豆瓣,生抽一勺,蚝油一勺,五香粉和盐少许来做。)
  • 10.炒出红油后,加入番茄和一勺白糖继续翻炒。
  • 11.加高汤。没有高汤加开水和鲜鸡汁少许,没有鸡汁加鸡精也凑合。小火煮10分钟左右。(买整条鱼做的小伙伴,此时可以把鱼骨和鱼头放进来一起炖,会很香的。)
  • 12.将腌渍好的鱼肉下入锅中打散,根据自己切鱼片的薄厚,煮三五分钟。
  • 13.将煮好的鱼肉和汤一起盛进铺好蔬菜豆腐皮的容器里,把葱花和水煮鱼调料包里的炝料包放在鱼肉上面。这个炝料包里基本上都是麻椒和辣椒,大家根据自己的接受程度酌情添加,我只用了1/4包的样子。
  • 14.烧一勺热油泼在炝料上,刺啦一声香气四溢,可以上桌了。
