  • 1.备好材料,猪腱肉汆水,淮山去皮切块,姜块拍扁;

  • 3.走地鸡对半开,洗干净去除内脏血水和杂毛;
  • 4.快速汆水洗去血污;
  • 5.鸡放入熬煮好的汤底中慢火浸熟;
  • 6.鸡肉刚好熟,马上捞出晾凉,让鸡皮充分收缩变脆,斩件;
  • 7.把汤底煮开,滑入斩件的鸡块,即完成「瑶柱浸鸡」。
