Steps to make 豉香花甲

  • 1.姜切片,葱切段,备用。
  • 2.花甲泡水养一天,让其吐干净泥沙,再焯水捞出(焯水时间以水开下入花甲,待其开盖10秒为好,久了肉质变老)。
  • 3.锅中倒入适量食用油,下姜片、葱白炒香。
  • 4.下花甲,舀入一勺豆豉酱、白糖、少许生抽,翻炒一下。
  • 5.下入葱叶,继续翻炒。
  • 6.最后倒入小半碗清水,盖盖焖煮5分钟即可。
  • 7.起锅前浇上一小勺白酒(料酒),即可。
