蔓越莓核桃节日面包
这是来自BBA书上的方子,我做了细微的修改,为了方便称量配料

Details of ingredients

  • 高粉385克
  • 鸡蛋90克
  • 42克
  • 5克
  • 酵母10克
  • 黄油28克
  • 牛奶115克
  • 清水60克左右
  • 核桃碎85克
  • 蔓越莓干碎250克

Steps to make 蔓越莓核桃节日面包

  • 1.把除了清水核桃、蔓越莓以外的东西全部混匀,然后根据需要慢慢加入清水
  • 2.揉成光滑的面包
  • 3.分次加蔓越莓干碎和核桃,揉匀以后再加另一个
  • 4.放进容器,盖上保鲜模,发酵至2倍大
  • 5.取出整形,分成六份,三份大点的,三份小点的面团,并搓成长条
  • 6.编成辫子
  • 7.把小辫子放在大的上面,变成双层辫子,也可以随自己的喜欢做其它的造型
  • 8.刷上蛋液以后开始二次发酵,发到2倍大以后,再刷蛋液
  • 9.放进预热好的烤箱,165度,中下层,烤25分钟,加盖锡纸,调到180度,再烤30分钟,烤到深棕色,敲上去有空洞的声音,就可以取出了,晾凉切片享用
