水煮牛肉
水煮牛肉是汉族传统名菜,属川菜系,至今各个地方都随处可见,做法也大同小异。顾名思义这道菜是以水煮为主要烹饪工艺,以牛肉为主料,搭配一些辣的辅料,而对于垫底材料可自由搭配,用大白菜、豆芽、麦菜、生菜、豆腐、豆皮、土豆等等都可以,这道水煮牛肉成品色泽红亮,肉片滑嫩,汤水麻辣,可以说这道菜集麻、辣、鲜、香于一身,让人食欲倍。身为广东人其实我吃不了这么辣的,只是为了做这道菜发上来……

Steps to make 水煮牛肉

  • 1.牛里脊肉切成如图所示薄片
  • 2.将切好的肉片放入碗中,先加入盐用手抓粘,再加生粉、鸡蛋清抓匀,再加生抽、老抽、蚝油、胡椒粉、鸡粉抓匀,腌制15分钟
  • 3.白菜一棵洗净后切片,沥干水份
  • 4.姜、蒜、干辣椒、葱白、蒜头、红花椒做如图处理,干辣椒和花椒打湿
  • 5.海底捞辣火锅底料适量、干辣椒碎适量备用
  • 6.锅内热油后下白菜炒熟,加点盐和鸡粉提味
  • 7.将炒好的白菜盛入大碗中
  • 8.锅内热油,下姜、蒜、干辣椒、红花椒小火炒香
  • 9.再加入一大勺豆瓣酱小火炒香炒出红油
  • 10.往锅内加入适量清水,盐、鸡粉、生抽、老抽、火锅底料、芝麻油
  • 11.锅内汤水烧开后转小火上盖煮三四分钟,再用漏勺将锅内的食材捞出
  • 12.继续将汤水煮开,下腌制好的牛肉片迅速划散
  • 13.肉片稍变色时盛出装入大碗中
  • 14.先在肉片上面撒上适量葱白和蒜碎
  • 15.再撒上适量辣椒碎和干辣椒段
  • 16.将适量花生油烧热至冒烟时淋在肉片上
