  • 橄榄油30g
  • 面粉100g
  • 转化糖浆75g
  • 葡萄籽油25g
  • 枧水1g
  • 奶粉10g

Steps to make 鲜玉米月饼

  • 1.转化糖浆、油、枧水一起放入盆中,充分搅拌至完全溶合
  • 2.加面粉和奶粉
  • 3.和成面团饧一小时左右。我和的面团比较多,因为要做两款月饼。
  • 4.新鲜玉米煮熟
  • 5.剥下玉米粒
  • 6.用料理机的绞肉档,搅成粗的颗粒状。有点颗粒感,口感更好
  • 7.加入熟糯米粉和糖
  • 8.搅拌均匀,让面粉、糖和玉米粒充分混合
  • 9.加橄榄油,抓拌均匀
  • 10.让馅料能成团,放置滋润一会儿。
  • 11.把馅料分成45克的剂子,面团分成15克的剂子
  • 12.包起来
  • 13.模具中撒熟糯米粉,入模成型入烤盘,烤前喷水防裂,
  • 14.烤箱180度预热5分钟,入烤箱烤5分钟后拿出来刷蛋液,然后继续烤15分钟即可
  • 15.烤好的月饼,放置一晚即可回油。
