剁椒凤爪--家常菜

  • 凤爪约400克
  • 剁椒1大匙
  • 蒜茸1/2大匙
  • 姜茸1/2大匙
  • 香葱1棵
  • 生抽2大匙
  • 精盐1/3小匙
  • 白糖1/3小匙
  • 胡椒粉1/3小匙
  • 高度酒1/2大匙

Steps to make 剁椒凤爪--家常菜

  • 1.将凤爪去指甲和垂直破半,用厨房纸吸干水分;
  • 2.开锅中大火,下油锅炸制,炸时注意油花四溅,用锅盖挡住身体,用长筷子翻动;
  • 3.炸至金黄色,捞起滤油;
  • 4.将姜和蒜剁成茸,葱白和葱叶各切粒,葱叶粒搁一旁另用;
  • 5.开锅中火,把剁椒煸出味来,升大火加葱白、姜茸和蒜茸,爆香;
  • 6.倒入凤爪,翻炒,加水约大半碗,点入精盐1/4小匙、生抽2大匙、白糖1/3小匙和胡椒粉1/3小匙,降中火烧约5分钟;
  • 7.大火收汁至剩下1/3汁左右,锅边淋入高度酒1/2大匙,稍翻几下,熄火,撒入葱叶粒,再兜几下,出锅。
