云腿月饼馅
每年中秋都做月饼,今年特别懒特别茫然,浑浑噩噩。后来想起冰箱里有一块火腿,要不就自己做馅来个云腿月饼,其他品种,且再说吧。
还没选好动手的日子,却来了一大堆月饼,让原本有些不想动的心更不想动了。虽然把月饼散发出去大半,剩下那一小堆也够吃些日子的。后续没准儿还有月饼上门,要不,今年不做月饼了?火腿都拿出来了,难道又冻回去?几番挣扎,终于还是决定把火腿变成火腿馅儿。
离中秋还有几天,月饼就已经足够吃到中秋以后了,今年,反正也犯懒,索性就只做个云腿月饼了事。馅儿走先。。。。
配料很简单,拌和在一起就行,刚刚做好的馅最好不要马上使用。存放数天,让火腿的咸与糖的甜互相渗透。当糖中有了火腿的咸味,火腿中渗透进糖的甜味,月饼就可以开工了。

Steps to make 云腿月饼馅

  • 1.用料:熟面粉17克,火腿肉135克,白糖135克,蜂蜜13克
  • 2.将火腿肉去皮,肥瘦分开,放入蒸锅中蒸熟。
  • 3.出锅晾凉。
  • 4.切成约4毫米见方的小丁,倒入大碗。
  • 5.加入熟面粉和白糖,混合均匀。
  • 6.加入蜂蜜,抓匀。
  • 7.装入碗中,封上保鲜膜,放入冰箱冷藏数天后使用。
