棉花糖蛋糕卷

  • 蛋黄85g
  • 牛奶60g
  • 玉米油50g
  • 低筋面粉75g
  • 蛋白165g
  • 细砂糖25g
  • Fluff棉花糖50g
  • 红丝绒液适量几滴
  • 淡奶油150g
  • Fluff棉花糖20g
  • 细砂糖10g

Steps to make 棉花糖蛋糕卷

  • 1.玉米油+牛奶混合均匀。
  • 2.加入蛋黄,混匀。
  • 3.晒入低筋面粉。
  • 4.加入红丝绒液。
  • 5.分成2份的面糊,小的约30g,把红丝绒液再加多一点,颜色和大分量的面糊有色差。
  • 6.蛋清打发,将fluff棉花糖分2次加入;蛋白出现纹路的时候加入细砂糖,打至湿性状态。
  • 7.将蛋白分3次加入到面糊中,小分量的面糊也拌入约4分之一的蛋白。
  • 8.最后将2份面糊稍微拌几下,不需要拌匀,倒入金盘中。
  • 9.烤箱预热,上下火160度,烘烤约25min。
  • 10.蛋糕卷出炉后,倒扣,掀油纸。
  • 11.淡奶油+fluff棉花糖+细砂糖,打发至7-8分。
  • 12.蛋糕卷上抹上一层淡奶油,再铺上草莓。
  • 13.淡奶油覆盖草莓,其余地方抹上薄薄一层。
  • 14.用擀面杖辅助蛋糕卷卷起来。
  • 15.最后再用剩下的淡奶油抹在蛋糕卷表面,放上草莓等水果。
