想想还是要提一下用来炒饭的白米饭,很多人喜欢用隔夜饭,原因是隔夜饭不粘容易炒散,还能把生冷的隔夜饭化为饭桌上人人喜欢的热点,真的无可厚非,但也有些人或比较正规的大酒店,他们用的是新鲜饭,在准备白米饭的时候就得煮得软硬适宜了,新鲜饭炒起来有饭香味,而且稍有弹性,新鲜饭与隔夜饭各有千秋各有好处。无论如何,合格的炒饭一般要做得粒粒分明,不能有米饭成团状或饼状。

  • 精盐2/3小勺
  • 胡椒粉1/2小勺
  • 白兰地1/2大勺

Steps to make 豇豆蛋炒饭

  • 1.豇豆和香葱切成粒状;
  • 2.锅置炉上开中大火,加底油,打入鸡蛋;
  • 3.翻炒碎了有点象桂花状,盛起备用;
  • 4.加入豇豆粒,炒干水,炒成一点点微焦,也盛起备用;
  • 5.倒入米饭,用锅铲捣散,如果炒的是隔夜饭,可喷一点水,反正要把饭炒热呗;
  • 6.饭炒热后倒入豇豆粒和蛋碎,点入精盐2/3小勺、胡椒粉1/2小勺,翻炒均匀;
  • 7.加入葱粒,在锅边转着淋入白兰地1/2大勺,稍兜几下,出锅,享用。
