香芋豉汁蒸排骨

  • 老抽2茶匙

Steps to make 香芋豉汁蒸排骨

  • 1.小排骨(baby back ribs)清洗干净,沥干水份。(小排骨的肉比较嫩,大排骨的肉比较柴。)
  • 2.放入1大匙料酒,2大匙蒜蓉豆豉酱,2茶匙老抽,1茶匙糖,2茶匙生粉抓捏均匀。(豆豉酱很咸的,根本自家口味调节。)
  • 3.用手抓捏均匀,腌2小时以上。(这样腌透的排骨怎么蒸都很滑嫩,不会柴,我一般中午腌好,晚上蒸。)
  • 4.香芋去皮切厚块,铺放在深口碟子上。(蒸的时间长,切厚块不会太软烂。)
  • 5.把排骨铺放上香芋上。
  • 6.放入开水锅,蒸40分钟。(喜欢有嚼劲的,就蒸20-25分钟,我家喜欢一咬就骨肉分离的口感。)
  • 7.葱切葱花。
  • 8.出锅前把葱撒上。
  • 9.排骨滑嫩,香芋吸收排骨汁非常好吃。
