Steps to make 奶酪蛋糕

  • 1.乳酪与牛奶混合搅拌至无颗粒状态,隔水搅拌均匀。
  • 2.加入6个蛋黄,和2克盐搅拌至无颗粒状态面糊。
  • 3.低粉过筛加入到乳酪面糊中。
  • 4.蛋白打入至无油无水的盆。
  • 5.然后用中速搅打25秒,再转低速搅打,使大气泡变成细腻小气泡;加入1/3细砂糖。继续低速搅打,打出更加细腻、纹路更清晰时,加入剩下的1/3细砂糖。蛋白糊出现光泽且打蛋器有阻力时,提起打蛋器,蛋白糊呈大弯钩。如图所示。
  • 6.蛋白部分分两次加入到蛋黄糊中,从底部往上拌均匀。
  • 7.最后将蛋黄糊全部倒入蛋白糊中,从底部往上拌均匀,切勿打圈。上拌均匀,切勿打圈。
  • 8.模具铺蛋糕纸,外部用锡纸包起来,倒入面糊,轻轻震荡一下。
  • 9.入烤箱水浴法,160度烘烤50分钟。
  • 10.待冷却,取出来,切块即可。
  • 11.成品早餐安排起来。
  • 12.成品。
