Steps to make 辣子鸡

  • 1.两只鸡腿去骨切成3厘米见方的块,用盐、五香粉、料酒腌制15分钟。
  • 2.这个时间准备好所需的各种干调,蒜剥皮就可以不用切片,干红辣椒一切两半滤掉辣椒籽。
  • 3.中大火烧热油锅,倒入煨好的鸡块,用筷子划散避免粘连在一起,炸至金黄捞出控油。
  • 4.第二遍复炸时大火加热油锅,炸至鸡块微焦捞出。
  • 5.这样边缘略微焦一些的才好吃。
  • 6.另起锅,倒入少量油爆香花椒,再放入蒜瓣、大料、香味、姜片炒出香味。
  • 7.再倒入干辣椒炒出辣味。
  • 8.倒入炸好的鸡块,加入半勺料酒、一勺生抽、少许盐和鸡精调味,加入小葱段炒至断生,这些动作都要快,否则干辣椒炒时间长会变黑。
  • 9.最后撒上一小把熟白芝麻出锅。
