咖啡饼干
翻出最后两包速溶咖啡,还是孩子用自己参加活动挣的辛苦钱送我的礼物,平时不给孩子吃这类东西,但是小孩子又总是想尝试点,于是,我用这两包速溶咖啡做了好吃的饼干,方子里只用到了蛋白,所以饼干更偏重脆脆的口感,咖啡味很香,烤制的过程中香味就已经溢满房间整个角落了。

Steps to make 咖啡饼干

  • 1.黄油室温静置,充分软化,用手指轻轻一戳能戳透。
  • 2.加入糖粉,不是砂糖。
  • 3.用电动打蛋器打发至蓬松轻盈的状态。
  • 4.分三次把蛋清加入黄油,每一次都充分搅打均匀后再加入下一次,不然容易打的水油分离。打蛋器的速度不要太高,容易打过头。
  • 5.打好的黄油更轻盈,颜色也发白。我用的是大鸡蛋,每个的重量大约70克。
  • 6.将低筋面粉和速溶咖啡混合过筛,筛入黄油,速溶咖啡里面有大粒的糖粒儿,筛出来的丢弃不要。
  • 7.用刮刀翻拌均匀。
  • 8.装入裱花袋,裱花袋里提前装好多齿的裱花嘴。
  • 9.挤入烤盘,此时室温大约25度,气温有变化时要适当增加或减少粉类的重量。
  • 10.送入烤箱,我的挤了将近4大盘,烤箱为60升,如果小烤箱小烤盘按比例减少各类食材的用量。
  • 11.风炉,150度烤了20分钟,平炉烤箱180度,20分钟左右,视饼干的大小和厚度以及火力注意增减时间
  • 12.取出晾凉就可以变得酥脆,然后密封保存。
