Steps to make 六寸中空戚风蛋糕

  • 1.以上食材适用于一份学厨6寸中空阳极戚风模具用量.鸡蛋选比较大个的,60g以上的,如果比较小的建议再加一个蛋清!
  • 2.过筛入低粉和玉米淀粉搅拌均匀。
  • 3.淡奶油加牛奶混合搅拌,加入食盐继续搅拌浓稠。
  • 4.搅拌均匀。
  • 5.加入蛋黄,继续搅拌。
  • 6.左右上下搅拌均匀的蛋黄糊
  • 7.蛋清一次加入柠檬汁和白糖打发至小短角转态。
  • 8.取1/3到蛋黄糊搅拌均匀
  • 9.再把蛋黄糊倒入剩余的2/3蛋清里继续翻拌至蛋清与蛋黄完全混合均匀的转态。
  • 10.倒入学厨6寸中空阳极戚风模具.
  • 11.东菱烤箱预热上火150下火140度3分钟后放入。烘烤烤35分钟。
  • 12.放入最底层即可。
  • 13.差不多20分钟后就可以看到明显膨胀了!好喜欢这款烤箱有炉灯能时时观察里面得状态!控温精准到1度!上色也相当均匀!
  • 14.出炉后记得倒扣。用酒瓶顶着就行了。
  • 15.这个配方做了两次,上色很满意!控温很精准!
