Steps to make 棉花奶油杯子蛋糕

  • 1.蛋黄中加入20克糖粉,隔水加热同时不断搅拌至砂糖融化,温度达到37度时取出
  • 2.用电动打蛋器打发蛋黄液至浓稠状态,提起打蛋头蛋液缓慢滴落
  • 3.加入炼乳和11克牛奶,继续用电动打蛋器搅打均匀
  • 4.筛入低粉和玉米淀粉,用电动打蛋器低速搅匀,直至看不见干粉
  • 5.蛋白中加入15克打发至硬性,提起打蛋头有短小尖角
  • 6.取一半蛋白霜加入到蛋黄糊中,翻拌均匀
  • 7.再加入剩余的蛋白霜,继续翻拌均匀
  • 8.将玉米油和剩余的11克牛奶混合均匀
  • 9.取一大勺蛋糕湖加入到混合液中,拌匀
  • 10.倒回蛋糕湖中,快速翻拌均匀
  • 11.将蛋糕湖倒入放置好纸杯的模具中,至8-9分满
  • 12.送进预热好的烤箱中,上下火150度,25分钟
  • 13.淡奶油中加入可可酱和15克糖粉,中速打发至9分,可裱花状态
  • 14.小蛋糕凉透后,用2D裱花嘴在上面裱花,散点可可粉装饰即可
