四川人逢年过节都吃汤圆,它的寓意犹如北方人吃饺子。我们称糯米粉揉成的面团为“粉子”,这种“粉子”在四川的大街小巷是有卖的,卖“粉子”的人一般在大清早或者傍晚骑着自行车到处叫卖“粉子——”最后的尾音拖得很长,远远都能听见,这样的粉子买回家做起来很是方便,因为它一般是石磨推的,选用上好的粘糯米,口感软糯,有弹性,无论是“粉子蛋花汤”还是用来包汤圆,都是很好吃的。汤圆馅儿就是我们说的“汤圆心子”,一般都是自己做的,我记得妈妈会用芝麻、花生、冰糖粒、橘皮糖、冬瓜糖、五仁等等,做出各种的汤圆心子,逢年过节或是招待客人都会提前做好很多,放在冰箱,吃的时候取出煮熟即可。因为现在我们在外地,好多原材料都买不到,今天的汤圆心还是妈妈上次来我这特意买给我的,是芝麻花生馅的,“粉子”也没得卖,只有用糯米粉了。等到下次妈妈自己做汤圆时,我再详细传菜谱!也许美食的魅力无非就是纯粹的味道加上你的双手!

    • 1.适量糯米粉倒入盆中
    • 2.准备好汤圆心子,也就是汤圆馅儿,它是黑芝麻花生的(因为是上次妈妈带来的,我就放冰箱了,所以拿出来稍加揉了揉,这个馅有猪油的原因所以馅料稍揉就很滋润了)如果你的馅是现做的就可以直接用了,口味首选黑芝麻是最优的,非常香郁。
    • 3.分多次少量加入水
    • 4.和成不粘手,软硬适中的粉子面团
    • 5.把粉子面团分成个个小剂子,就跟北方人包饺子分剂子是一个道理
    • 6.把汤圆芯子也分成等分,搓圆(我上次没分,直接用手掰的,结果弄得汤圆表面“五颜六色”,如果你对自己包汤圆的手法有信心你也可以不用分)
    • 7.取一份粉子面团,按扁
    • 8.再稍稍整理成稍大的饼状
    • 9.放入一份汤圆馅
    • 10.用虎口或指头整理收口
    • 11.在掌心搓圆
    • 12.依次做好所有汤圆
    • 13.烧好开水
    • 14.依次慢慢一个个放入汤圆
    • 15.用勺子轻轻推动汤圆,继续保持中火煮
    • 16.待汤圆煮至浮在水面上,即熟
    • 17.美味出锅,享用吧
    • 18.好事成双,汤圆一般是按双数盛入碗中
