Steps to make 羊肉粉

  • 1.羊肉加入适量清水浸泡1小时。
  • 2.羊肉冷水入锅,加入3片姜和1匙花椒焯出血沫。
  • 3.碗中加入1匙花椒,八角,小茴香,陈皮,香叶,白寇和白芷,倒入适量清水浸泡5分钟。
  • 4.锅中加入植物油,放入鲫鱼煎至两面金黄。
  • 5.加入适量清水。
  • 6.放入羊肉,3片姜,葱结和沥水的香料撇去浮沫后烧开转小火煮1小时。
  • 7.汤加盐调味,羊肉取出切片。
  • 8.米粉煮熟过凉后放入碗中,加入过滤的高汤,摆上羊肉片,撒葱花香菜即可。
