二节子炒面——新疆味道
二节子炒面,在新疆也算是比较常见的一种面食了,炒二节子,炒丁丁在我看来都是在拉条子的基础上变化而来的。简单说就是拉条子切短丁丁,为丁丁炒面,切寸段儿为二节子。但在做法上稍微有所不同,二节子面要粗一些,这样有嚼头,但都不少了西红柿,洋葱做配菜,面得用拉条子的面,肉类最好是羊肉,这才是最正宗的新疆炒面类。

    Steps to make 二节子炒面——新疆味道

    • 1.材料:面粉 西红柿 西红柿酱 洋葱 芹菜 白菜 羊肉 植物油 青红辣椒,胡椒粉 大蒜 酱油 鸡精
    • 2.在盆中加入面粉,将碗中的盐水逐渐倒入盆中然后搅和,开始和面,将面从盆中拿出来然后在案板上不停的揉。也可以停下来几分钟然后再揉,直到面的表面光滑为止。之后将面团切成长块,将长块揉成长条,放到小盆中,将面上摸上一层清油,然后醒面一个小时。做法和拉条子一样
    • 3.把西红柿 洋葱 芹菜 辣椒 大蒜洗净切成段或 块和沫丝
    • 4.羊肉切成丝,用酱油和淀粉腌一下
    • 5.将醒好的面拿出来,拉成面条,稍微比拌面的面条要粗一些,切成长度约3寸左右,不要超过10公分为好。
    • 6.锅里水开后下入二节子,将面捞出来,过冷水捞起,用清油拌一下,防止沾在一起。
    • 7.锅里油热7成,下洋葱块和辣椒丝和大蒜沫小火炒香
    • 8.加入腌过的羊肉。
    • 9.将肉丝滑散断生,烹入酱油,西红柿酱,将调味料和爆香料及肉丝翻炒均匀。加入西红柿块
    • 10.白菜丝,芹菜段盐,大火翻炒。
    • 11.翻炒出不少汤汁后,加二节子面,将面和菜略微翻炒均匀
    • 12.下胡椒粉鸡精,快速翻炒给菜断生,尝下咸淡,可出锅了
    • 13.色香味美,咸淡适中
