烫面蛋糕的柔软【蜜桃蛋糕卷】
市面上,看到水蜜桃有售了。有的手掌般巨大,有的小小一个;mama说有分北京水蜜桃,有的是本地培植的良种...反正都好吃,就加点在我爱的蛋糕卷里吧。这次烤的蛋糕卷用的是做烫面蛋糕的方法,卷蛋糕的时候柔软的程度有触摸毛巾的错觉!

  • 蜜桃两个(小)
  • 鸡蛋3个
  • 30克
  • 30克
  • 植物油30克

Steps to make 烫面蛋糕的柔软【蜜桃蛋糕卷】

  • 1.水和油混合烧开,筛入面粉迅速拌均匀成为烫面团;
  • 2.晾至不烫手温度,分次加入蛋黄拌均匀。
  • 3.分次拌入所有蛋黄后,即成蛋黄糊;
  • 4.蛋白分次入糖打发至细腻。
  • 5.取1/3蛋白和入烫面蛋黄糊;
  • 6.拌好后再次回到剩余的蛋白拌均匀,即成蛋糕糊。
  • 7.蜜桃去皮切丁备用。
  • 8.蛋糕糊倒入铺好锡纸的烤盘上,送入预热好的烤箱,150度中层15分钟左右,表面金黄即可。
