爆炒牛头肉——新疆味道
这爆炒牛头肉其实没有爆炒羊头出名,爆炒羊头清蒸餐馆很常见的特色菜,只是现在羊肉特贵,已经涨到60多元一公斤了,市场很少有买熟羊头的,只有民族屠宰场有卖的,水涨船高,一只羊头比一只土鸡还贵。那些羊头都论个卖,大的可以买两只鸡了。所以我们这边的市场很少有买的 ,这牛头肉也是一位民族的帅哥特意从那边来的,因为这边经常有人要这些,那位民族的帅哥每天特意赶到夜市来,用小车拉来,看着都很新鲜干净,说自己煮的,虽然价格高些,可生意还特好。

材料:熟牛头肉 花椒粒 胡椒粉 干红辣椒 洋葱 香菜 油 盐 鸡精 酱油 料酒
做法:1把牛头肉切成薄片,越薄越好,干红辣椒泡泡切段,洋葱去皮切丝,香菜洗净切段
2锅里油热5成加花椒粒干红辣椒炒出香味,加牛头肉料酒翻炒,加洋葱丝盐翻炒 ,加酱油鸡精翻炒均匀
3加胡椒粉炒均匀,关火,撒上香菜段,拌均匀出锅
牛头肉不可久炒,要不那瘦牛肉都炒碎了
要吃特辣的,可以加红油或者小尖椒
大火烧油热,关火一会,油凉5成时
加花椒粒和干红辣椒 ,这样花椒粒和干红辣椒都炸不糊
香味也出来了
