三杯鸡常见于台湾及广东。三杯鸡的独特之处在于烹煮时不加汤水,只需酱油,米酒和麻油同煨而成,加入九层塔就更加美味,香气扑鼻。

Steps to make 三杯鸡

  • 1.鸡洗干净,去头尾和鸡脚,剁块。
  • 2.九层塔摘取叶子洗净
  • 3.蒜去皮,姜切片备用
  • 4.生抽,花雕酒和糖调匀备用。
  • 5.锅烧热,放入1/3杯麻油,把姜片,蒜粒爆香。
  • 6.放入鸡块炒至变色。
  • 7.倒入调味料烧开,转小火煮至汁呈浓稠状。
  • 8.加入九层塔拌匀,就可上碟。(餐馆一般把汁收干才上碟,我喜欢带点汁,用来浇饭再美味不过了)
