Steps to make 雨花石汤圆

  • 1.材料备好!将糯米粉分成两份:一份150克、一份50克。50克糯米粉里加入可可粉。豆沙馅搓成球状备用
  • 2.在150克里取少许糯米粉,用温水和成鸡蛋大小的“生芡”,用手按扁
  • 3.将“生芡”放入开水煮熟,成为“熟芡。捞出分成一大一小,分别放入两个盆里
  • 4.慢慢加入温水和成光滑的面团
  • 5.将白面团分成4个等份、褐色面团分成3个等份
  • 6.面团依次搓长、按扁,一层白色,一层褐色,白、褐相间依次摞起来,再轻轻按一按
  • 7.将其切成大小各异的剂子,使用的刀最好锋利一点
  • 8.用手指轻轻将剂子捏成小饼状,放上与小饼相匹配的馅料
  • 9.收口后,用两手心轻轻搓成石头状即可,纹理没有关系不用太规则,雨花石本来的纹路就是有点杂乱的
  • 10.锅中水烧开,把汤圆依次放入,用筷子拨动一下以免粘锅。用大火煮至汤圆浮出水面,转小火再煮5分钟左右,直至汤圆煮熟,就可盛出食用啦
