肉末雪里蕻
“雪里红”,据著名词典学家王光汉《词典问题研究*“现代汉语词典”推荐词形检讨》研究,当作“雪里蕻”。蕻,《广韵》音“胡贡切”,《集韵》释为“茂”。《广群芳谱·蔬谱五》:“四明有菜名雪里蕻,雪深,诸菜冻损,此菜独青。”谓此菜于雪时反茂,故名。写成“红”没有办法说通。   

【科属】为十字花科植物芥菜的嫩茎叶。是芥菜类蔬菜中叶用芥菜的一个变种。

【别名】雪菜、春不老、霜不老,重庆部分区县也称其香青菜。   

【性味归经】性温,味甘辛;入肝、胃、肾经。   

【功效主治】解毒消肿,开胃消食,温中利气。明目利膈。主治疮痈肿痛,胸隔满闷,咳嗽痰多,耳目失聪,牙龈肿烂,便秘等病症。   

【营养成分】每100克含水分91.5克,蛋白质2.8克,脂肪0.6克,维生素1.6克,碳水化合物3.6克,钙23.9毫克,磷64毫克,铁3.4毫克,维生素B1 0.07毫克,核黄素0.06毫克,尼克酸0.7毫克,抗坏血酸83毫克。

Steps to make 肉末雪里蕻

  • 1.准备食材:雪里蕻、肉馅、毛豆、干辣椒、葱、姜、蒜;
  • 2.雪里蕻切碎、葱姜蒜干辣椒切好待用;
  • 3.凉锅放油,油热后放干辣椒、葱、姜、蒜爆香;
  • 4.倒入肉馅煸炒至出油;
  • 5.倒入雪里蕻翻炒;
  • 6.加入毛豆继续煸炒;
  • 7.加入适量生抽和盐,翻炒均匀即可。
