Steps to make 椒盐蛏

  • 1.新鲜蛏子用盐水浸泡一个小时,吐干净泥沙,清洗干净,多清洗几遍。
  • 2.捞出沥干水分。
  • 3.用剪刀在两个壳的连接处剪一刀,让两个壳分开。
  • 4.用小刀去掉一半壳(也可以焯水煮开口后再去壳)。
  • 5.全部弄好装盘备用。
  • 6.把蛏子均匀的裹上生粉。
  • 7.抖掉多余的粉,放另外一个盘子里。
  • 8.锅里多倒点花生油,油温五成热放入蛏子,中小火慢炸至金黄。
  • 9.把炸好的蛏子捞出控油。
  • 10.准备食材。青红椒切丁,葱白切碎。
  • 11.锅里倒一点点油,下青红椒和葱白。
  • 12.沿锅边倒一勺料酒,翻炒均匀。
  • 13.倒入炸好的蛏子,翻炒几下,均匀的撒上椒盐。
  • 14.撒上葱花即可。
  • 15.成品。外酥里嫩,非常香。
