鳗鱼烧麦
一个月有30天,其中有20天的早餐我都选择了楼下早餐店里的烧麦,比起包子味道更足,比起粥又更能填饱肚子,最重要的是味道特别好~老板还会将烧麦包成圆形拿去油炸,香味飘出好远,那又是另外一股风味了~
这次的鳗鱼烧麦也不遑多让,一出炉就被同事一扫而光,极具鳗鱼鲜味的糯米外面包着半透明又带着点韧劲的面皮,味道真真是极好的~

Steps to make 鳗鱼烧麦

  • 1.材料:鳗天下蒲烧鳗鱼,饺子皮,糯米(需提前一晚泡发),胡萝卜,干香菇,生抽,老抽,胡椒粉,盐,糖,蚝油,油。
  • 2.将干香菇用温水泡发后切成碎末,胡萝卜洗净去皮后切成末;
  • 3.将鳗天下蒲鳗提前解冻,切成条再切成小丁;
  • 4.将提前浸泡一夜的糯米蒸熟成糯米饭;
  • 5.锅中热少量油,将鳗鱼丁滑熟(鳗鱼过油后味道会更香),接着将鳗鱼丁推到一边;
  • 6.将香菇丁和胡萝卜丁逐一入锅炒香;
  • 7.然后再和鳗鱼丁混合炒匀;
  • 8.接着在锅中加入糯米饭,加入一勺老抽,半勺生抽,少许胡椒粉,盐,糖和半勺耗油炒匀;
  • 9.取一张饺子皮,市场买的饺皮都会有点厚,可以再擀薄一些;
  • 10.将鳗鱼糯米饭放入后捏合,接着放在虎口处用大拇指和食指圈起来收紧,做成两头大中间小一些的烧麦;
  • 11.放入蒸笼;
  • 12.锅中水烧沸后将做好的烧麦上锅蒸10-15分钟左右取出即可。
  • 13.伴随着一阵白雾冲天而起,热乎乎的鳗鱼烧麦起锅了~皮薄馅嫩,光是看着口水就要流出来了~
  • 14.夹起一个烧麦,糯米特有的香气扑鼻而来,咬一口,入口的先是滑滑的面皮的韧劲,接着是糯米的滑爽,再就吃到了鳗鱼肉的鲜美,一点都不会腥,还有香菇的嫩和胡萝卜的甜,,,,真幸福呀!!
