Steps to make 麻辣鳝鱼

  • 1.鳝鱼去内脏,划成片,不要洗。野生鳝鱼肚皮是黄黄的。
  • 2.把调料洗净,切好。
  • 3.蒜苔洗净,切段。
  • 4.锅热后,加菜油、色拉油加热,下干辣椒、花椒、泡姜、泡椒、大蒜炝锅。下剁碎的郫县豆瓣,炒出香味。
  • 5.下鳝鱼后,加料酒、醋、白糖、生抽翻炒。
  • 6.再加入蒜苔、青红椒、大葱翻炒。
  • 7.鳝鱼炒熟后关火,起锅时加入鸡精、盐须(香菜)。
  • 8.装盘上菜。
