刺瓜是蔬菜中的黄瓜的一个品种。

剥皮鱼学名叫绿鳍马面鲀,潮汕俗名:迪仔;在上海和闽浙一带称橡皮鱼,在北方称猪油、皮匠鱼、面包鱼、烧烧角。

  • 1.刺瓜一条,刨皮。
  • 2.从中间切开,去除里面的瓤,再每瓣切成四条,每条切斜片。
  • 3.切好斜片待用。
  • 4.干剥皮鱼泡水,洗净剥皮鱼的肚子,待用。
  • 5.锅里加适量油,加热。
  • 6.放入刺瓜斜片,翻炒。
  • 7.翻炒一段时间后,放入洗净的剥皮鱼,继续翻炒。
  • 8.加一小勺盐,翻炒,添水淹过食材,加盖烧。
  • 9.煮至刺瓜熟透,用锅铲容易切断时,加入葱段,翻动,起锅即可。
