素炒鳝鱼丝
“素炒鳝鱼丝”虽然是以香菇为主料, 但由于香菇经过整形后非常神似鳝鱼, 而且油炸烹饪后的口感也与鳝丝不相上下, 做出来后外焦里嫩、甜咸味浓。 这道素菜荤做的方法也很简单, 但让人吃到口里绝对以假乱真, 让人分辨不出, 还在感叹“鳝鱼”好吃。

Steps to make 素炒鳝鱼丝

  • 1.将冬菇泡发洗净,轻轻攥干水分;
  • 2.用剪子沿着冬菇的圆边转圈剪成长条,并断成5cm左右的条;
  • 3.加适量的盐拌匀,腌渍5分钟后撒入干淀粉拌匀,使每条“鳝鱼丝”都均匀沾上干粉;
  • 4. 锅中烧热油,下入蘸匀干粉的“鳝鱼丝”炸制,炸至干硬定型后捞出;
  • 5.准备好葱姜丝, 香菜和红萝卜丝, 提前勾兑好碗汁备用 :碗中加盐、糖、味精、生抽、醋、水淀粉、适量水搅匀;
  • 6.起锅热油,下入葱姜蒜爆香;
  • 7.再下入炸好的“鳝鱼丝”翻炒;
  • 8.烹入兑好的碗汁稍煮开;
  • 9.下入香菜翻炒;
  • 10.即可出锅装盘。
