北方咸菜是家中必备的小菜,可是外买真是不放心,正是萝卜上市季,便动动手在家腌制卫生,干净,放心美味小咸菜五香辣萝卜干,制作简单,口感不错,来一碗粥配上自制五香辣萝卜干,简直就是人间美味。
食材用量依萝卜多少来添加盐,五香粉和辣椒粉比例1:1:0.5来定量,喜欢辣可多放一些,不喜辣可不放,这个菜谱量微辣,也可用白萝卜替代,青萝卜或白萝卜切记去皮,带皮腌制口感更棒。

Steps to make 五香辣萝卜干

  • 1.青萝卜洗净控干水分
  • 2.然后带皮切成手指粗细条
  • 3.放入干净板上晾晒一天
  • 4.晾晒水分没有,观察看萝卜条发鲶了就行了
  • 5.准备适量腌制食材:盐,五香粉,辣椒粉1:1:0.5的比例配好
  • 6.晾晒鲶了的萝卜干放入干净无水无油的陶醉盆中,倒入腌料开始按摩运动,使每根萝卜条均匀裹上腌料,盖上盖腌制一天左右
  • 7.像这样均匀挂满每根萝卜条
  • 8.腌制后进行二次晾晒一天,晒到萝卜皮皱巴巴就大功告成,放入密封干净器具中,一次多做一些,随时可取用干净无水无油夹子或筷子都可以,以免器具不干净萝卜干变质,一般腌制一周就可以食用了
