流心咖啡冰皮月饼

这款月饼是简易版,用的是冰皮月饼预拌粉,非常方便,倒入热水和成团即可。不用静置,不用蒸。包入流心馅,再淋上巧克力酱和可可粉,轻松做出来。

Steps to make 流心咖啡冰皮月饼

  • 1.将流心馅放入裱花袋中。
  • 2.先做流心馅,甜馅分成每个20克,一共8个,弄成碗状,每个挤入3克的巧克力流心馅,不要挤太多,难包,易漏馅。
  • 3.慢慢收口,搓圆,盖上保鲜膜备用。
  • 4.将冰皮月饼预拌粉和咖啡粉倒入和面盆中。
  • 5.倒入热水,用刮刀拌成团。
  • 6.放置手温时,戴上一次性手套,用手揉至面团表面光滑。
  • 7.将冰皮分成每个25克。
  • 8.冰皮放在手掌上压扁,放上馅料。
  • 9.收口搓圆,再弄成圆柱形,方便入模。
  • 10.50克月饼模在熟糕粉里压一下,多余的粉抖去。将月饼圆坯放入模具里,在案板上向下压(力气不用太大,因为上面需要抹可可酱和撒可可粉,不需要图案清晰),提起月饼模。
  • 11.将冰皮月饼放在烤盘上,辅料里的牛奶加热到50度左右,倒入巧克力豆,搅拌至巧克力融化成巧克力酱,用汤匙将巧克力酱淋在月饼表面。
  • 12.表面筛上可可粉,做好的冰皮月饼放入冰箱冷藏后再品尝,切开就可以清晰看到巧克力流心了。
