四川小吃红油抄手
红油抄手是四川非常有名的小吃之一,麻辣鲜香,非常好吃。抄手的馅是纯肉的,三肥七瘦,剁成肉馅,用料理机搅拌也是可以的,再加上葱姜、盐、胡椒粉、花椒面、淀粉、鸡蛋、鸡精味精,加上适量的水或骨汤,顺方向搅拌上劲后包制,抄手煮熟后馅又鲜又有口感,三天不吃就要想。

Steps to make 四川小吃红油抄手

  • 1.猪肉切片,加上姜末、葱花和两汤勺水,用料理机搅成肉馅,倒入碗中,再放入适量盐、一调味勺胡椒粉,半勺花椒粉,少许鸡精、一个鸡蛋、一小勺豌豆淀粉。顺方向搅拌上劲,过程中可以打入少量水或高汤,也可以加入肉皮冻。PS:肉馅搅拌上劲很重要,多搅十分二十分钟,这样的肉馅比较有口感。
  • 2.提前准备好的抄皮。从超市买来的抄手皮。四川地区是正方形的,胶东基本都是梯形的。面皮薄硬、干粉少的抄皮煮熟后口感较佳。
  • 3.取一张抄皮,中间放入适量的肉馅。
  • 4.将抄皮对折。
  • 5.左边一头抹上肉汁或水,中指从中间一勾。
  • 6.将右边叠上左边,捏紧即可。
  • 7.将抄手逐一包好。
  • 8.碗里放入调料:盐、少许酱油、花椒面、花椒油、红油、少许鸡精味精。能吃麻辣可以多放点花椒面和红油。加入一点水或高汤。
  • 9.锅中放入适量水烧开。
  • 10.水开后放入包好的抄手,煮一开后加入小半碗凉水,再煮一开就可以。可以适量烫点蔬菜,包菜、油麦菜、油菜、豌豆尖等都是可以的。
  • 11.将抄手盛入碗里。
  • 12.撒上葱花和少许熟白芝麻。
