酸奶蛋糕

Steps to make 酸奶蛋糕

  • 1.取2个无水、无油干净的盆,1个盆中放入酸奶、玉米油、蛋黄,用打蛋器低速打匀,倒入过筛的低粉,用刮刀搅拌,再用打蛋器低速搅打均匀;另一个盘放蛋清;
  • 2.将蛋清用打蛋器搅打出大气泡,放入1/3的细砂糖,全程低速均匀的搅打蛋白,至蛋白粘稠时第二次加入细砂糖,同时加入一半的柠檬汁,再搅打至能拉出软软的小弯钩时,加入剩余的细砂糖和柠檬汁,一直搅打至湿性发泡;将1/3的蛋白糊倒入蛋黄糊中,翻拌均匀,
  • 3.同样的办法分二次倒入余下的蛋白糊,翻拌均匀;
  • 4.倒入模具中,模具放入烤盘中,烤盘中注入2/3的热水,放入烤箱,设定50分钟;
  • 5.烤至离结束还有25分钟时,放入烤架,烤架上放锡纸,温度提高5-10度(根据自己烤箱的脾性来确定);
  • 6.时间到,用牙签插一下,有无面糊带出,无面糊就OK了,或用手轻轻按一下蛋糕表面,轻按能弹起~OK了,拿出大烤盘,倒掉水,把蛋糕放回烤箱,利用烤箱的余温来给蛋糕降温,不至于蛋糕快速收缩;
  • 7.放冰箱冷藏一下,效果更好;
