    Steps to make 牛肉干

    • 1.牛肉切片,厚度自己决定,厚度炒制时间长一些,不宜掌握。
    • 2.干红辣椒掰成小段,葱白切片,姜也切成片。
    • 3.取一小碗,倒入生抽,老抽,料酒,盐,白糖调成汁。(老抽:生抽:料酒3:2:3)。
    • 4.把切好的牛肉片倒入碗里用清水浸泡一个小时,充分去除血水以及去除肉的腥味。
    • 5.泡好后倒掉血水,把牛肉片的水分挤干,我用手挤的。挤干后放入切好的葱和姜,料酒,少量盐,腌制30分钟。
    • 6.锅中倒入油,5成热时放入辣椒和花椒炒香。
    • 7.调成小火倒入腌制好的牛肉片翻炒。
    • 8.炒制的过程中会出很多水,这水要倒掉。
    • 9.继续小火炒,一定要把水分炒干。这步很关键!
    • 10.牛肉片炒干后把备好的调料汁倒入锅中,继续翻炒到无汤的状态。
    • 11.撒入熟芝麻即可,喜欢的可以放点孜然。
    • 12.下酒菜。可当零食吃。家里的干红辣椒很辣,再加点辣椒就可以叫麻辣牛肉干了。
