火丁毛豆是一道杭帮菜风味的家常菜,其前身为火丁甜豆,由本人经过改良而成为火丁毛豆,这道菜的灵魂就是火腿丁,所以千万不能用肉丁来代替,不然味道就平平无奇了,该菜的特点色泽清亮,香气浓郁,咸香适口,滋味绵长,下面来制作吧

Steps to make 舌尖上的家常菜—火丁毛豆

  • 1.原料及辅料为,毛豆仁,五香豆腐干,金华火腿,水煮冬笋半个
  • 2.首先将毛豆仁焯水,毛豆表面有一层薄膜经过加热会脱离,浮在水面上,毛豆仁会沉在底部,所以轻轻的将水倒掉,毛豆薄膜会一起流出去,然后在加清水,反复几次将薄膜全部到出后,就是一颗颗干净清爽的毛豆仁,捞出备用
  • 3.然后在加清水,反复几次将薄膜全部到出后,就是一颗颗干净清爽的毛豆仁,捞出备用
  • 4.将火腿丁的肥肉部分切下来,切成丁,然后单独放在一个碗里
  • 5.将香干,冬笋,火腿全部切丁备用
  • 6.锅中加油,然后先倒入火腿肥肉丁炒一下
  • 7.然后倒入,香干丁,火腿丁,笋丁炒一下
  • 8.在然后加入毛豆,加盐,味精,适量清汤炒拌均匀,然后勾个薄芡翻匀即可出锅(此菜的烹调方法为炒,炒菜是不见芡汁的,但为了保证菜品的湿润感,所以要勾个薄芡,又称偷芡)
