五色桃山红豆馅月饼

  • 百年草粉3克

Steps to make 五色桃山红豆馅月饼

  • 1.白豆沙馅做法:白芸豆洗净,用水浸泡一夜。
  • 2.泡发好后逐个剥去表皮。
  • 3.锅里加入盖过豆仁的水,大火煮开改中火,煮至豆仁可轻易用手搓成粉的程度关火,捞出豆仁用凉水清洗三次,放入棉布袋中直接挤压成泥状就成了白豆沙坯子了。
  • 4.将白豆沙坯子放入炒锅中,加入细砂糖用大火炒至糖完全溶解。
  • 5.改中火加入黄油继续炒,直到馅料不粘锅改小火慢炒,炒至馅料温度达到110度时关火。
  • 6.炒好的白豆沙馅。
  • 7.五色桃山红豆馅月饼做法:将黄油放入容器中隔水软化,晾凉备用。
  • 8.容器中放入自制白豆沙馅,倒入隔水软化后的黄油拌匀。
  • 9.加入淡奶油拌匀。
  • 10.加入蛋黄拌匀。
  • 11.加入盐和炒熟的糯米粉。(可根据皮料的软硬度适当增减炒熟的糯米粉)
  • 12.和成面团后盖上保鲜膜,松弛30分钟。
  • 13.将松弛好的面团平均分成五份,每份约123克。取其中一份加入6克黄金芝士粉和成黄金芝士面团。
  • 14.取其中一份加入3克抹茶粉和成抹茶面团。
  • 15.取其中一份加入6克紫薯粉和成紫薯面团。
  • 16.取其中一份加入3克百年草粉和成百年草面团。
  • 17..取其中一份加入3克可可粉和成可可面团。
  • 18.和好后的五色面团。
  • 19.将五色面团分别分成每一种颜色五份,每份25克的小面团,滚圆备用。将红豆馅分成30克一个,滚圆备用
  • 20.取一个饼皮用手压扁,包入馅料用虎口的力量来推面皮,收口用虎口和拇指压紧,以防烤时露馅。
  • 21.压模前模中撒上高筋粉使之附着,再将粉轻轻敲出,以免压膜后面团沾粘而无法扣出,将压好的五色桃山红豆馅月饼坯均匀的排入烤盘。
  • 22.放入预热210度的烤箱中,上火大,下火小,烘烤至月饼表面微上色,约12分钟。
