茯苓蒸糕
《平底锅烤点心》的一道蒸食。一个盖子一个蒸架就可以把平底锅变成蒸锅。其实不必局限于平底锅,同样的方式也可以用在煮锅和炒锅上。当然,有现成的蒸锅,直接用就好了,犯不着搞此花样。
原版茯苓蒸糕用到市售松饼粉。揣测这个松饼粉应该是含有膨发剂的预拌粉,因为配料中没有任何膨发剂可以解释成品图的蓬松状态。
没有松饼粉,有点无从下手。不过之前有一款松饼有着详细用料,乾坤大挪移,把那松饼的料用在茯苓蒸糕上,想也不错。
果然不错,蒸糕涨发很好,看起来有点开花馒头的感觉。只是芝麻似乎应该蒸好后再撒——大嘴一咧,所有的芝麻全都被掀翻了。

  • 细砂糖40克
  • 全蛋1个
  • 160克
  • 泡打粉1小勺
  • 黑芝麻少许

Steps to make 茯苓蒸糕

  • 1.用料
  • 2.将鸡蛋打入大碗,加水,搅拌均匀
  • 3.倒入细砂糖,
  • 4.搅拌均匀
  • 5.面粉,茯苓粉,泡打粉混合,筛入碗中
  • 6.用橡皮刮刀拌成均匀面糊
  • 7.倒入模具中2/3满
  • 8.表面撒黑芝麻
  • 9.放入沸水锅中,大火蒸15分钟左右
  • 10.熟透熄火
  • 11.出锅稍凉
  • 12.脱模
