鸡肉汉堡
我做这款汉堡通常都是提前做好饼坯,然后鸡肉也是提前一天的晚上腌好,第二天早起起来炸一下就可以了,这样比较省时间。

  • 高粉210克
  • 低粉50克
  • 鸡胸肉一块
  • 西红柿一个
  • 圆生菜1片
  • 奶酪片1片
  • 鸡蛋1个
  • 牛奶80克
  • 黄油20克
  • 白糖40克
  • 酵母5克
  • 3克
  • 芝麻少许
  • 料酒半勺
  • 1瓣
  • 淀粉30克
  • 炸鸡粉一勺
  • 胡椒粉少许

Steps to make 鸡肉汉堡

  • 1.把饼坯材料中除黄油外的所有材料放进面包机,(盐和糖分别放于两角);启动面包机把面团揉至光滑,再加入黄油,然后继续揉至扩展阶段;2、揉好的面团发酵至两倍大(大约1个小时左右),用手指沾点干面粉在面团上捅个洞,周围的面不反弹、不回缩是发的比较好的;
  • 2.发酵好的面团放在案板上,揉出面团里的空气,(可以用擀面杖擀压排气);彻底排气后的面团,平均分为9份,滚圆后静置15分钟左右
  • 3.再次搓圆成型放烤箱发酵40分钟;发酵完成后表面刷蛋液、撒芝麻,然后烤箱预热180度,烤15分钟即可
  • 4.鸡胸肉清洗干净沥干水分,加料酒、蒜、盐、糖和3分之1勺淀粉腌制20分钟左右(可以提前腌好放冰箱过夜,更入味)
  • 5.淀粉、炸鸡粉混合装在一个深盘子里,鸡肉埋进面粉里,然后揉搓滚压使之沾满面粉
  • 6.锅内烧热油至7成热,下入鸡翅炸5-6分钟,色泽金黄时捞起,放厨房纸上吸去多余油
  • 7.汉堡坯一分为二,奶酪片放饼坯底部上,微波炉叮30秒取出
  • 8.取出叮好的汉堡坯,先放上炸好的鸡肉,然后放洗净切片的西红柿;圆生菜清洗干净撕成片放到上边,然后挤上适量的沙拉酱
  • 9.盖上饼坯的另一半即成
