  • 1.水油皮的料都放入小盆,可把盆放在电子称上,慢慢加料,每一种料看差值,就知道每一种放了多少,根本不用量器。
  • 2.先用筷子搅拌均匀。
  • 3.用手不停揉水油皮,中间可用摔打揉面法,直至可以拉出薄膜。
  • 4.再次揉圆放保鲜袋静置30分钟。
  • 5.油酥的料放进盆内。
  • 6.油酥揉匀,这个时间短些,同样放保鲜袋静置。
  • 7.花生放微波炉高火2分钟叮熟,每一分钟翻一下,视花生多少定时间,能轻易搓掉皮就可,放凉后去皮掰两半。芝麻全为买的熟货。花生油为炸过一次东西剩余过滤,若是生的,建议饭锅内加热使用。
  • 8.锅烧热,放入面粉小火炒,用打蛋器搅动最佳,能防止产生小块,翻动均匀,沾的还少。
  • 9.炒至面发黄闻到淡淡的炒面味即可停火,继续翻动一会,可用刷子刷下锅边的面粉。
  • 10.放油、芝麻、花生仁。
  • 11.搅拌均匀,面粉都沾油。
  • 12.放凉后再放冰糖
  • 13.团成团子,若很散,可继续加点油。也可以减少花生仁或冰糖量。团子要使劲捏圆。
  • 14.水油皮和油酥搓成条各分成8个小剂子。
  • 15.水油皮小剂子滚圆按成皮,油酥滚圆,放在水油皮上,包起来收紧口。
  • 16.擀成牛舌状,卷起。
  • 17.继续擀成牛舌状卷起,重复3次。最后一次整形,尽量擀成圆形。
  • 18.取馅放在皮上包起,慢慢向上收口包起,而不是和包包子一样直接包起。
  • 19.收口朝下按扁。
  • 20.一次做好所有,可盖保鲜膜在烤箱预热时间内醒一会。
  • 21.烤箱180度上下火预热后,放入月饼生坯烤约18分钟。用上下火中途不用翻过来,也可只用上火,10分钟翻一次,烤7、8分钟再翻过去烤一会,时间会长些。
  • 22.表面烤金黄即可出炉。拿的时候小心,很容易捏碎。
