大虾的做法很多,这种做法,一虾两吃,虾尾香酥脆,虾头酸甜鲜,两种美味一次享受。

Steps to make 罗汉大虾

  • 1.将大虾洗净,剪掉虾腿,虾须
  • 2.大虾从三分之二处切断,头少尾多,除掉虾线和虾袋
  • 3.炒勺内放适量的油,烧热后放葱.姜.蒜和虾头煸炒,虾变红后加适量白糖.醋.料酒..盐.少量水,大火烧开,盖上盖子转小火焖十分钟,待汁浓时关火待用
  • 4.虾的尾由背部片开,腹部相连,带尾,
  • 5.用刀在里面切交叉花刀,用刀拍一下
  • 6.将虾仁和肥肉用刀背砸成泥,加入盐.味精.料酒.五香粉,姜末搅匀
  • 7.将蛋清加淀粉和成糊调匀加入肉泥内抓匀
  • 8.虾尾撒点干淀粉,将肉泥挤个球放在虾尾上,撒点白芝麻
  • 9.锅中油五成热时,将虾尾放入油锅中炸成金黄色捞出
  • 10.在盘中间摆上生菜叶,上面放虾头,转圈摆上虾尾
